Raw mango dip recipe from Himachal with some health benefits for summers

Himachali raw mango Mahni recipe, raw mango dip recipe. 

Mahni is a delightful semi-liquid dish made from raw or half-ripe green mangoes and is usually eaten with plain boiled rice as a side dish in Himachal.




Here are some amazing benefits of green or raw mangoes:- 

According to Ayurveda, it is known for its cooling properties and is often used to make a delightful semi-liquid dish which is a great home remedy for heat strokes. Raw mangoes contain more Vitamin C than the sweet ripe mangoes and work wonders for all your tummy troubles.
The extra dose of Vitamin C helps in the absorption of iron and therefore, raw mangoes are often recommended to those suffering from anaemia. 


Raw mangoes also contain pectin, found in other fruits like berries and apples, which makes it good for your heart. Both raw and ripe mangoes are rich in Vitamin A. raw mango can prevent dehydration and provide energy. 

To make Mahni you will need :

Raw or half-ripe mangoes – 2 large
Onion – One large
Salt – for taste
Sugar – If required (depends on how sweet or sour you like the dish)
Red chilli powder – 1/2 Teaspoon
Fresh Crushed Mint Leaves –  1 tbsp
Freshly chopped coriander leaves –  1 tbsp

Steps to prepare :

Wash and boil the raw mangoes.  ( you can steam them too) Let them cool a little and take out the pulp in a bowl.
Mash the pulp to make it smooth.
Finely chop the onions.
Wash the fresh mint leaves and crush them a little (Save a few for garnish).
Add cold water to the pulp stirring it gently till it makes a nice semi-liquid preparation.
Add the chopped onions and spices.
Add a little jaggery or sugar if the preparation is too sour. I like it tangy sweet😋.
Taste to adjust the amount of sweetness or spices and garnish with mint leaves and keep it in the fridge. *Serve cool*

Tip – Never use metal to stir, serve or store sour preparations.

Crispy and tasty Sabudana Cutlets are perfect for breakfast or snack. I tried to make this recipe for my Monday fasting and prefer to those, all who fast during Navratri.

There are a lot of variations of fasting recipes. So, you too can make changes to this recipe by skipping or adding ingredients of your choice.I like fried cutlets to make but you can also rost them on Tawa to it healthy. I hope you will love to eat these Sabudana cutlets or sabudana tikki during vrat (fast).

Must try this yummy sabudana cutlet recipe:-

  INGREDIENTS

  • ½ sabudana / sago
  • 1 large potato, boiled and peeled
  • ¼ cup peanuts / groundnuts, roasted & crushed
  • 1-inch ginger,1 green chilli finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • ¼ tsp cumin powder/jeera powder
  • add salt according to your taste. 
  • 2 big spoon of  oil, to fry. 

   

INSTRUCTIONS

  1. firstly, take soaked sabudana ( 15mint)  in a large mixing bowl
  2. add in 1 large boiled and grated potato, add ¼ cup crushed peanuts, 1 chilli, 2 tbsp coriander leaves and salt to taste.combine, mix and mash well with your hand.       
  3. now prepare small flat patties or any shape
  4. fry them on a medium flame, fry till golden brown.
  5. finally, serve sabudana Tikki with tomato sauce or green chutney.

Notes:

  • firstly, soak the sabudana for at least 15-30 mints.
  • if you are not able to form a dough then add another boiled potato or a tbsp of cornflour and mash well.
  • additionally, add aamchur and lemon juice for tangy flavour.
  • finally, sabudana Tikki is tastier when served hot and crispy.😋

Instant Sooji Toast | Rava bread toast| A Delightful Breakfast Meal

 A new addition to your breakfast menu crispy toast is made of sooji flour, also called Rava or semolina.  The flour is rich in fibre, carbohydrates, calcium and many minerals. 

All these health-boosting properties packed in one ingredient makes sooji toast an ultimate first meal of the day. The making of this dish calls for just a handful of ingredients. It is made of sooji and curd batter, mixed with veggies and spices, and takes minutes to draw up.


Ingredients:
 
1 cup sooji
Half cup curd/ mali and milk 
Half cup of water (optional )
2 medium-sized onions, chopped
2 green chillies, finely chopped
1 tomato, chopped
1 capsicum, chopped
Half cup coriander leaves
bread slices
Salt to taste
Half cup butter/ vegetable oil 
 


How To Make It:
 
Step 1 - Add sooji, curd, water to a bowl. Whisk well.
 
Step 2 - Add all the veggies, chilli, garlic and salt to the batter.
 
Step 3 - Let it rest for 10 minutes.
 
Step 4 - Meanwhile, cut the bread slices diagonally into two pieces.
 
Step 5 - Heat butter in a pan and place the slices on the pan.
 
Step 6 - Once the bread is slightly toasted, flip it. Smear the batter on the top side of the bread and wait till the other side of the bread is toasted. Flip the bread again and place the batter on it. Cook the bread on both the sides till it turns golden brown and crispy.
 
Serve it with green chutney or sauce 💞🤤

'kurkuri Bhindi' a quick, tasty, spicy, and crispy Bhindi recipe.

'Kurkuri  Bhindi' a quick, tasty, spicy, and crispy Bhindi recipe.


Kurkuri Bhindi is a delicious, gluten-free Indian style crispy okra/ladyfinger fry. It is one of the best side dishes to serve with spicy dal or any other vegetarian curry. What I love most about besan kurkuri bhindi fry – it required fewer  ingredients and turned out really so easy to make.

Firstly, Bhindis are lightly coated and marinated in a mixture of Besan (Gram Flour) and Indian spices and left for 30 minutes.
Then deep-fry marinated Bhindis so that they become crispy.

Kurkuri Bhindi can be enjoyed as a side dish with Rice or roti or can be served as the evening snacks.

     Ingredients

    •       500 grams okra (bhindi or ladyfinger)

      •                 ½ teaspoon turmeric powder

    •        1 teaspoon red chilli powder

    •        1 teaspoon coriander powder (ground coriander)

    •        1 teaspoon cumin powder

    •        1 teaspoon garam masala powder

    •        1 teaspoon dry mango powder (amchur powder)

    •        1 teaspoon chaat masala

    •        ½ cup gram flour (besan or chickpea flour)

    •        salt, add as required

    •        10 tablespoons oil or add as required, for frying the bhindi in batch


      Preparation

·     wash out bhindi in water for 3-4 times. Wipe them dry with a kitchen napkin. Slice the okra vertically into 4 pieces.

                                  

·        Now sprinkle all the spice powders one by one on the sliced of bindis gently mix it 

     ·    Sprinkle the besan, Again gently mix the besan must evenly coat. Marinate the mixture for 25-30 minutes. You could also keep it for an hour.

Making Bhindi Kurkuri

1.      In your big pan, heat 2 to 3 tablespoons oil. 

2.     Add a batch of marinated bindi and fry. You can fry in three to four batches depending on the size of the pan. 

               

3.     Fry till golden brown and crisp on a medium flame. 

4.      keep on turning the bhindi so that they get fried evenly.

5.     Serve kurkuri bhindi  directly as they are or if you want you could garnish them with coriander leaves, julienned ginger, or sliced green chilis.

6.     Enjoy the kurkuri bhindi as a side dish with rice or with rotis and a bowl of curd.

Notes:-

Tips for making Karakuri bhindi fry

·         The recipe can be easily halved.

·         You can add less or more of the spice powders as per your requirements.

In my village, we made chilla out of the pumpkin flowers 🌟 and guess what this is super healthy and tasty too 😋
Ingredients
  • 10 fresh Pumpkin (Zucchini) Flowers. 
  •  1 cup besan (gram flour) 
  •  2-3 tablespoon vegetable cooking oil
  • ¼ tablespoon cumin seeds (jeera)
  •  ¼ tablespoon Mirchi (chilli) powder
  •  ¼ tablespoon cumin seeds (jeera) powder
  •  ¼ tablespoon turmeric powder (Haldi)
  •  salt as per taste
Instructions
  1. Clean the Pumpkin (zucchini) flowers by removing the pistil inside and wash them by hand properly and cit them into big pieces.
  2. Mix all ingredients besan (gram flour), rice flour, Mirchi (chilli) powder, salt as per taste, cumin seeds (jeera), black cumin seeds (Kala jeera), cumin seeds (jeera) powder and turmeric powder well.
  3. Then add water in the bowl little by little to prepare to perfect a bhajia batter for Pumpkin (zucchini) flower fry recipe.
  4. Dip the Pumpkin flowers piece in the batter bowl.
  5. Heat the pan with 2 tablespoon cooking oil.
  6. Let pumpkin (zucchini) flowers fry for 5-10 minutes from both sides well on medium flame.
  7. Then take out and keep aside. Now the pumpkin (zucchini) flowers recipe is ready to serve. Enjoy them hot with tomato sauce. 
Note:- You can use egg also if you like it. 🥚

Morel Mushroom is also known as GUCHCHI Mushroom worldwide. it has tremendous medicinal value as it is rich in IRON, Vitamin D, Vitamin B, and Anti Oxidant which helps in Liver protection and Immune system activity. This is one of the wild varieties of Mushrooms which is rich in taste with musky flavor. 

Many people used to collect it to cook in their own kitchen while for the other hundreds of peoples in the area its an extra source of income. They are naturally grown and found in the Himalayas after the snowfall in March-May, can't be grown commercially. it's a task to find then in the Himalayas, It is as tough as searching for gold, this is another reason why they are known as the most expensive mushrooms.



One of those expensive and unique ingredients that grow wild in the foothills of the Himalayas is the "Gucci mushroom" which is priced between Rs. 10,000 to Rs. 30,000 per kilogram! 

Morels, which are mushrooms in the Morchella family, are distinguished from other mushrooms by their fluffy, honeycomb-shaped heads, a rather unsightly mass of folds and bones that actually contain large amounts of flavorful flavor. 

They grow in coniferous forests in temperate regions, and the cold foothills of the Himalayas, in Himachal, Uttaranchal, and Jammu and Kashmir. They grow best during the rains and snowfall, but it may take months before enough can be collected.

There are also some stories that have been linked to Gucchi Mushrooms, like for instance, thunder and lighting are known to make them multiply and also that they grow best in areas that have suffered a forest fire. But none of them has been validated yet. The mysterious growth of Gucchi Mushrooms remains as obscure as they search for it.

      
 

Why Morel Mushrooms so Expensive?

  1. They're hard to cultivate. But you already know this. For this reason, they are mostly foraged from the wild, meaning your morels were hand-picked by someone who traveled a great distance to harvest them.
  2. They have a short growing season. Morels are spring mushrooms that can be found between March and June, depending on climate, weather, and elevation.
  3. They're highly perishable. Because morels are hollow, they don't hold up well in transport, so getting them to the market can be difficult.
  4. We can't grow it commercial its totally depend upon nature and weather.


                             

 

Health benefits of Morel mushrooms

  1. Iron deficiency The anemia is caused due to the low level of hemoglobin and red blood cells due to which low level of oxygen reaches the cells. It leads to low energy levels, poor immunity, and brain function.
  1. Cognitive health Iron is essential for the brain function as it plays a vital role in carrying oxygen to the brain because 20 percent of oxygen is used by the brain in the body. The deficiency of iron can affect mental functions and memory as well.
  1. Treat Arthritis Copper provides anti-inflammatory activities that relieve stiffness and pain that are related to arthritis. It assists the muscular strength, repair connective tissue and lowers joint pain.
  1. Thyroid health Potassium, zinc, calcium, and copper are essential for the proper functioning of thyroid activity and also prevent hyperthyroidism. The absence of one of these minerals can lead a person to suffer the thyroid. It leads to weight gain or loss, fatigue, appetite, change in body temperature, etc.
  1. Bone health Vitamin D plays a vital role in the absorption of calcium which is essential to maintain bone health. The calcium level is maintained by the calcitriol and parathyroid hormone.   2. The adequate consumption of zinc lowers the infection and damage of the liver. Zinc assist to clean the liver by eliminating wastes that help to reduce the free radical damage and assist the absorption of nutrients. This helps to keep the liver ailments at bay.

    7. Cure diarrhea deficiency of zinc is associated with diarrheal diseases as well as digestive problems so the adequate consumption of foods rich in zinc helps to cure diarrhea and prophylaxis. It also enhances the immunity function so that it increases the ability of the body to counteract diseases. 

    8. Supports vision The deficiency of Vitamin B2 increases the risk of eye ailments such as keratoconus, cataracts, and glaucoma. Vitamin B2 has the ability to prevent these eye disorders. Riboflavin drops are applied to treat eye ailments such as glaucoma. 

    9. Maintains cholesterol It reduces LDL cholesterol levels which increases the chances of having a stroke, heart attack, and other heart diseases. Vitamin B3 increases HDL cholesterol levels and reduces triglycerides. There are several medicinal plants that can be used to treat common ailments and you do not have to go to the Himalayas to get them. You can plant medicinal herbs in your kitchen garden and reap the benefits. Here is a list of medicinal plants you must have in your home



1. Holy Basil/Tulsi
Basil Holy, Tulsi Seeds, Herbs, AromaticTulsi or holy basil is that quintessential plant in almost all Indian households.  Ajwain, also known as Omum or Karpuravalli in Tamil, Vaamu in Telugu is extensively used in treating stomach disorders. Drinking Ajwain seeds water facilitates the release of gastric juices and improves digestion. Chewing ajwain seeds on empty stomach cures cold and cough.





6.Curry Leaves
Curry Leaf, Kerala, Small TreeCurry leaves are best known for their culinary uses in the Indian kitchen. It has an aromatic and pungent-sweet mix taste. The curry leaves are extensively used in preparing chutney, soups, stews, and even dal (pulses). It is fried in oil to exhibit its best flavour. You can also dry the curry leaves and crush them, to use in various dishes.
